BEEF STIR FRY WITH UDON NOODLES

Serves 4. Approx 400 calories per meal.
Ingredients
- 400gms udon noodles
- 600gm lean beef (sliced)
- Bunch of broccolli
- 1 carrot - jullienne
- 1/2 red onion
- 1/2 red capsicum
- 200gm snopw peas
- Handful of mushrooms diced
Method
Stir Fry
- Boil 400g udon noodles for 30 secs, stir and drain
- Add broccoli and snow peas to boiling water for approx 2 min
- In non stick pan spray with olive oil add carrot, red onion, red capsicum, diced mushrooms and sliced beef
- When beef is brown add the cooked broccoli and beans to the pan and stir through
- Add cooked noodles
Sauce
- Mix 2 tablesppons sweet chilli sauce, 2 tablespoons soy sauce and 1/2 squeezed lime juice
- Stir sauce through and toss throuh the stir fry
